BIGGEST MORNING TEA

It was a full house at the bowling club on the 26th May, as we gathered over Devonshire tea to raise funds for the Cancer Council.

Thanks to Jenny for sharing her personal journey with cancer and highlighting the importance of fundraising dollars. Inspired by her story, our community raised well over $400 from the event and had a lovely time together in the process - win, win!

Neighbourhood House week

"Local connecting locals" at our Pancake Breakfast in Neighbourhood House Week 2023.
PANCAKES – taste.com.au

 
300g (2 cups) self-raising flour
55g (1/4 cup) caster sugar
1 1/2 tsp baking powder
375ml (11/2 cups) milk
3 eggs
1 tsp vanilla extract
80g butter, melted, cooled, plus 1 cube, extra, cold
 

1.      Sift the flour, sugar and baking powder into a large bowl. Use a spatula or wooden spoon to push mixture to the side of bowl, making a well in the centre.
2.      Use a whisk to mix milk, eggs, vanilla and melted butter in a jug. Add to bowl. Whisk until just combined. (Don’t overmix.) Preheat oven to 120C/100C fan forced.
3.      Heat a large frying pan over medium-low heat. Wrap the extra cold butter cube in paper towel and use to lightly grease the pan. Set butter aside until needed again.
4.      Pour slightly heaped 1/4 cupfuls of pancake mixture into the pan. Spread each to about 12cm diameter. (Depending on pan size, you may only fit 1 or 2 at a time.)
5.      Cook for 2 minutes or until bubbles and holes appear on top and underneath is golden. (Watch the temperature. If too hot, pancake will burn before cooking through.)
6.      Flip pancake. Cook for 1 minute or until cooked through. Transfer to oven to keep warm. Regrease pan. Repeat with remaining pancake mixture to make 12 pancakes in total.

​Usha’s Indian Fare
Aloo Fry (Potato Fry)
 
4 medium size potatoes
2T oil
1/2 t cumin seeds
1/2 t mustard seeds
I dry 🌶️ chilli
1 sprig curry leaf optional
Salt to taste
1/2 t tumeric
1 t coriander powder
1 t cumin powder
1 t chilli powder (more or less to your taste)
 
Method
Heat oil in a saucepan.
Add dry chilli, cumin and mustard seeds.
Wait till they splutter.
Add curry leaf.
Add peeled and cubed potatoes.
(May wish to microwave potatoes first)
Add dry spices and salt.
Mix.
Cover and cook on medium to low heat till cooked through.
Sprinkle with fresh washed, chopped coriander.
Enjoy!
 
 
Roti Recipe
 
2c plain flour
2T oil
1t ghee
½ to ¾ C hot water
Extra ghee or butter to brush roti
 
Method
Rub the oil, ghee into flour.
Add boiling water to the flour and mix with a fork. 
When slightly cool, knead and make a soft dough.
Leave to rest about 10 minutes.
Make golf ball size balls and roll each ball into a circle. 
Toast on hot griddle and brush with ghee or butter when cooked.
​Pão de queijo (Brazilian Cheese Bread)
 
500ml full cream milk
150ml vegetable oil
1tbs salt
1kg tapioca starch
600gr grated Tasty cheese
4 eggs
 
Preheat the oven to 200 degrees Celcius.
Put the tapioca in a large bowl. Reserve.
Boil milk, oil and salt, put on the top of the tapioca and mix well with wooden spoon.
Wait 5 minutes to cool and add the cheese.
Mix, then add the eggs.
Mix very well with your hands until everything amalgamates and you have a soft dough which comes out of the bowl.
Make golf size round bowls, bake in 200 degree oven for 20 minutes.
